Ahtanum is primarily an aroma hop with moderate bittering properties. More grapefruit forward than Cascade, Ahtanum is a great alternative to Cascade or Amarillo for aroma and flavor additions. Characteristics include citrus, floral, pine, and earthy notes. Try this hop in American-style Bitters, Pale Ales, and IPAs. Substitutes: Cascade or Amarillo. The Ahtanum name is derived from the area near Yakima where the first hop farm was established in 1869 by Charles Carpenter.

Used as an aroma hop in ales and lagers. Cinnamon and herbal character with grapefruit aroma. Subtitutes: a blend of mostly Crystal or Tettnanger and a little bit of Cascade.

This is both an aroma and bittering hop with distinctive grapefruit aroma/flavor. Used in American Ales. Substitutes: Centennial and Columbus have a similar aroma/flavor, however, they are more bitter.

Floral and citrusy, with a quite pleasant aroma. Centennial is an extremely popular bittering variety. Often called a "supercharged" Cascade. Typical use is in US-style Ales.

Medium intensity, spicy, piney, and distinctive grapefruit aroma. Chinook is a high alpha-acid hop typically used in American style pale ales, IPAs, stouts, porters, barleywines, and lagers as a bittering hop. Possible Substitutions: Nugget, Columbus, Northern Brewer, Target, and possibly Centennial.

Citra has a special flavor and aroma that it imparts to beer. Depending on the brewing process and the hopping rate, the flavors and aromas of beers hopped with Citra might range from grapefruit to lime, melon, gooseberry, and lychee fruit.

This high alpha acid bittering hop was developed from the Centennial hop. It is a low-cohumulone hop which gives a clean but long-lasting bitterness to beer. Earthy, spicy, pungent, with some citrus overtones. Not overwhelmingly citrus like Cascade. Primarily used in IPAs, Pale Ales, Stouts, Lagers, it can also be used as a dry hop in American lagers. Possible substitutions: Nugget, Chinook, Wye Target, Northern Brewer.

Mild, spicy, & flowery. Crystal is very popular in the craft-brewing industry. It is viewed as the most pungent of the new triploid Hallertau family of hops. Typical beer styles associated with this hop are: pilsners, lagers, kolschs, ESBs, alts, and Belgian-style ales. Possible Substitutions: Mt. Hood, Hersbrucker, French Strisselspalt, Liberty, and Hallertau.

Glacier has balanced bittering properties combined with a good aroma profile. Good for use in most English-style and American ales, Pale Ales, ESBs, Bitters, Porters, and Stouts. An excellent substitute for Willamette, Fuggle, Tettnanger, and Styrian Goldings.

Magnum is a high alpha acid hop with intensely spicy (black pepper, cinnamon, nutmeg) and slightly citrusy aroma. Excellent bittering hop. Used in American strong ales, lagers, pilsners and stouts. Substitutes: Crystal, Columbus & Nugget

Northern Brewer is a true dual-purpose hop, with moderate amounts of alpha acids combined with an acceptable aroma profile; woody, earthy, and slightly fruity. Beer styles utilizing this hop: ESB, bitter, English pale ale, and porter. Similar to Nugget.

A pleasant, blackberry aroma and woody flavor. Widely used as a bittering hop.

Summit is a new high alpha variety known for its intense citrus aroma and Tangerine, Mandarin and grapefruit flavors. Used in Pale Ales, IPAs and Double IPAs. Possible Substitutions: Simcoe, Amarillo, Cascade

Warrior is used for its aromatic and especially bittering properties, due to its low Co-Humulone content. Possible substitutes: Magnum, Nugget, Columbus. Use in: Pale Ales, IPAs.
